Rocket Stove Applications in Commercial Kitchens
Published on March 9, 2026 by SGE Fabs

When we talk to commercial kitchen operators about rocket stoves, the first reaction is often scepticism. They have cooked on gas for years. They know their equipment, their timings, their workflow. Why change?
The answer is always the same: money. When a hotel owner sees Rs 8,000 to Rs 12,000 in monthly fuel savings, the scepticism disappears quickly. But integrating a new cooking system into an existing kitchen requires thought. Here is how our customers have done it successfully.
The Hybrid Kitchen Model
Almost no commercial kitchen goes 100 percent rocket stove overnight. The practical approach is a hybrid model where rocket stoves handle the high-volume, sustained-heat cooking and LPG handles the quick, precision tasks.
- Rocket stove tasks: Rice, sambar, rasam, dal, curries, gravies, boiling water, tea and coffee in bulk, biryani, stew. Anything that involves a large vessel and sustained heat.
- LPG tasks: Dosa tava, quick frying, tadka, stir-fries, and any task requiring instant flame adjustment.
This split typically moves 60 to 80 percent of cooking to the rocket stove, cutting LPG consumption proportionally.
Kitchen Layout Considerations
SGE Fabs rocket stoves are compact enough to fit into most kitchen layouts without renovation. Practical placement tips from our customers:
- Near a wall or corner: Place the stove against a back wall near an existing ventilation opening. Although the stove produces minimal smoke, positioning near ventilation is good practice.
- Firewood storage nearby: Keep a day's worth of dry firewood within arm's reach of the stove operator. A simple shelf or bin works.
- Stable, level surface: The stove needs a flat, stable surface. A concrete floor is ideal. If the kitchen floor is uneven, a simple levelled platform works.
- Separate from gas burners: Keep rocket stoves and gas burners in distinct zones so workflow is clean and staff know which station handles which tasks.
Staff Transition
Kitchen staff who have only worked with gas stoves adapt to rocket stoves within a day or two. The cooking itself is identical. You place a vessel, you apply heat, you cook. The only new skill is feeding firewood, which is intuitive after a few rounds.
We hear from hotel managers that their cooks actually prefer the rocket stove for bulk items because the heat is more even and the cooking is faster than they expected.
Real Commercial Kitchen Setups
A meals restaurant in Coimbatore
Two SGE 15 kg rocket stoves handle rice and sambar. One LPG burner handles dosa and frying. Monthly fuel cost dropped from Rs 16,000 (all LPG) to Rs 7,000 (firewood + reduced LPG).
A hotel in Pollachi
Three rocket stoves run the main kitchen for breakfast and lunch service. Two LPG burners handle evening a la carte orders. They have not increased their LPG order in 6 months despite growing their customer base.
A wedding caterer in Salem
Four SGE rocket stoves travel to every event. The entire catering operation runs on firewood with zero LPG. They cook for 300 to 500 guests per event and estimate saving Rs 3,000 to Rs 5,000 per event on fuel.
Getting Started
Start with one 15 kg rocket stove. Use it for your highest-volume dish (usually rice or sambar). Measure your LPG consumption for a month and compare. The numbers will tell you whether to add more units. Most of our customers add a second stove within the first month.

A small restaurant needs 1 to 2. A mid-size hotel needs 2 to 3. A large catering operation needs 3 to 5. Contact SGE Fabs for a recommendation based on your specific menu and volume.
